    Greek Appetizers

    Greek appetizer dishes are often referred to as meze and they are typically served with ouzo, which is liqueur flavored with anise and widely consumed in Greece.

    Sometimes, dips are served as appetizers with loaf bread or pita bread. In some regions, appetizers may consist of dried bread called paximadhi softened in water.

    Below are some more common appetizers served in typical Greek cuisine:

    Tzatziki

    A kind of dip, tzatziki consists of yoghurt with cucumber and garlic puree.

    Taramosalata

    This is fish roe mixed with moistened breadcrumbs. Sometimes, in lieu of breadcrumbs, boiled potatoes are used.

    Spanakopita

    This is spinach wrapped in filo pastry.

    Tyropita

    This is a kind of cheese (which the Greeks call feta) wrapped in filo pastry.

    Boureki

    Again, wrapped in filo pastry, only this time the fillings are either made of vegetables or a variety of meats. The Greeks sometimes refer to this as –pitaki, e.g. tiropitaki.

    Saganaki

    Fried cheese, often plain, but may include ingredients like shrimp.


    Greek Dishes

    Moussaka

    Although a dish (eggplant-based) of the Balkans and the Middle East, Moussaka is most often associated with Greece and Turkey. The Greek version is the most famous and consists of layers of ground lamb or beef, sliced aubergine, and tomato. It is topped with a white sauce and baked.

    Sometimes, instead of using eggplant as a base, zucchini or rice is used. Moussaka is a filling dish and is often used as source of sustenance by shepherds out in the pasture. For this reason, the dish is nicknamed “the shepherd’s pie.”

    Souvlaki

    On of the most popular Greek fast foods, Souvlaki is made of small pieces of meat, with vegetables sometimes added, and grilled on a skewer. The meat was traditionally pork, but today, chicken is used as a popular alternative.

    Gyros

    Gyros, or simply gyro, is made of meat roasted on a vertical rotisserie. Sometimes, gyros is used inside a pita bread to make pita sandwich, which consists of, in addition to the meat, various salads and sauces. These salad and sauce fillings may include tomato, French fries, tzatziki sauce, and onions.

    To get an idea of what gyros is like, take the Arabic shawarma or the Turkish doner as something somewhat similar. Note that in Athens and in some parts of Greece, the pita gyro is often confusingly referred to as souvlaki.

    Pastitsio

    This is a layered baked dish with a bottom layer made of bucatini, or some other tubular pasta. Cheese and egg are used as binders.

    For the second layer, ground meat of either lamb or beef is used, mixed with tomato and cinnamon, nutmeg, or allspice. The third layer is another layer of pasta, again with cheese and eggs as binders.

    The top layer may vary. It could be a type of egg-based custard or a flour-based Bechamel. In both cases, they usually contain eggs and flour.

    To finish it off, bread crumbs or cheese are sometimes sprinkled on top.
